Think creatively. Don't be afraid to experiment. Mix flavors you think you will enjoy together, forget what the experts say. When all else fails, KISS, keep it simple stupid!

Get cookbooks that teach cooking fundamentals, read about & practice the basics, use that new found understanding as your personal launch pad to impress yourself, your family and friends. Cook extra large meals occasionally and invite your neighbors and local friends at the last minute to sit with you for the pure fun of it.

I started in my mother's kitchen at an age when I stood tugging at her skirt to support myself, mystified by the goings-on way up there on the counter tops such that she sat me up on the counter edge and taught me by talking to me about the things she was doing. Inquiring minds need to know! I made my first scrambled eggs from scratch at about 4 or 5 years old and my first Toll House Chocolate Chip cookies from scratch at the same age! No question about my priorities! I got real serious about cooking as a young teenager when our father died and our mother went back to work which precluded her providing wonderful home cooked meals everyday. There was a mutiny in her kitchen, although she jumped ship before the hungry crew got hold of her! I will be forever grateful that our mother kept an open kitchen, which meant that all good ideas and foreign styles of cooking were welcome. To that end her son's learned that there were no foods or techniques to be afraid of. I treasure adult memories of days away home from work to prepare sit-down meals for 10-50 folks. Why? Because I had a house big enough to seat everybody and enough friends to invite for a good meal!

BREAKFAST

Power Packed Smoothie - In a blender, one ripe banana, 1/2 -1 whole single serving NON-Fat Yogurt Plain or fruit flavor of your choice, 8-12 oz Vanilla Soy Milk (Lite of you're dieting, High Octane if not), 1 scoop Soy Protein Powder, 2-4 oz of fresh or frozen fruit of choice optional, 4-8 ice cubes if you want icy cold and thick like a slush.

Take your Phyto-Vite, Vitamin E, Omega oil and other morning supplements with this nutritious, delicious, salubrious, satisfying Smoothie delight!

This is a meal that will provide nutritional sustenance until lunch or all day if need be. This smoothie makes an enjoyable breakfast, lunch or dinner. It is excellent 1-2 hours before or 1/2 hour after a workout or competition when you need a quick nutritious meal that is very light on the system or replenishment of cellular nutrition right after a strenuous event.

LUNCH

If you have to eat and you need more than some fresh fruit, stay away from any & all fast food joints.

DINNER

While a complete hot meal with protein, vegetable, starch and desert is a wonderful thing, once you're past 40 something you can't eat like that everyday without strenuous exercise everyday. The notches on your belts will get used up!

A fantastic, satisfying lunch or dinner meal is made of fresh salad greens with a small portion of hot or cold fish, poultry, pork or red meat on top. I cook a large portion of protein with fresh salsas and lite sauces that provide or compliment the salad dressing. These meats and their sauces are good as cold leftovers on salads and can be warmed if you prefer. The salad can include: other fresh vegetables and fruits, fresh herbs, spices and cheese. An excellent, flavorful dressing is 1/2 a fresh lemon per serving squeezed over the greens with a slight drizzle of fresh, flavorful extra virgin olive oil. If you are not aware, good extra virgin olive oil is produce and taste tested by connoisseurs like fine wine. Don't waste your money or calories on the national name brands. Pay more, support all the hard working small producers and enjoy the different flavors available. Cut the lemon in half, stick a fork in it, rotate the lemon over the fork tines while squeezing and scrape the lemon pulp that protrudes off into the greens. NO salt, pepper if you must!
